Stuffed Medijool Dates

Every Monday night, my girlfriends and I gather for wine, snacks, and community. We come together from various places in life: we are a mix of single, married, kidless, and proud moms. We have different careers and interests, but we gather weekly because we believe in the power of community. 

Anyway, these stuffed dates are on the menu for when I host group in just a few weeks! They're simple, unique, and tasty. They're vegetarian and gluten-free. And the best part? They're really easy! Honestly, this entire recipe will take you less than ten minutes. 

Stuffed Medijool Dates

What You'll Need:

  • 16 Medijool dates, pits removed
  • 1/2 cup crumbled goat cheese (or, 3/4 cup blue cheese, if you prefer)
  • 12 walnuts, chopped in half

The Method:

  1. Remove the pit from each date by cutting each date in half lengthwise and removing seed. Using clean hands, stuff each date with goat cheese and top with walnut.

These can be made up to two days before an event and stored in a closed container in the refrigerator. They make a perfect appetizer or hors d'oeuvre.
