Can we all agree that mangoes are a universally-loved food?! This super simple Mango Pico de Gallo is the perfect appetizer when paired with chips, but it really shines when it's paired with my Cilantro Lime (Cauliflower) Rice and GF Teriyaki Glazed Chicken! Best of all, this takes just 10 minutes to whip up, and it can be stored in an airtight container for up to 3 days.

What You'll Need:

  • 2 ripe mangoes (dark yellow inside - when in doubt, taste for yourself!)
  • 2 ripe medium tomatoes
  • 1 medium red bell pepper
  • ¼ cup chopped red onion
  • ¼ cup fresh cilantro leaves
  • 1 medium jalapeño, seeds removed
  • 1 large lime, juiced (about ¼ cup lime juice)
  • ½ teaspoon salt to taste

The Method:

Chop very finely the bell pepper, onion, tomatoes and jalapeño. Combine together into a medium mixing bowl. Squeeze lime juice into the bowl and add salt. Let sit to marinate, then serve with chips or pair with Coconut Lime (Cauliflower) Rice and Teriyaki Chicken!
