Summer salads should be three things: easy, delicious, and refreshing! This dish is all of that (and more)! This Melon Berry Mint Salad is the perfect side to a heartier entree (so it's a great addition to any traditional BBQ spread). The lightness of the mint and sweetness of the berries are a perfect compliment to each other on a warm day!
In my house, we love dessert. So I often serve this with a dollop of fresh whipped cream or vanilla ice cream! Taste it once and you'll understand why this is a family favorite for us! Enjoy!
What You’ll Need:
1 pound strawberries, sliced
1 pint blueberries
1 (6 oz.) container raspberries
1 (6) oz. container blackberries
½ watermelon, chopped into small cubes (or rounds using a scooper)
1/2 cup chopped mint leaves (very finely chopped)
¼ cup fresh honey or grade A maple syrup
¼ cup lemon juice
In a large bowl, combine all ingredients, starting with the berries and melon. Add maple syrup and lemon juice, and gently mix. Add in mint leaves just before serving and enjoy!
*To store, keep refrigerated in a closed container for up to two days.
