Raw Fruit & Nut Energy Bars

Spring and Summer in Oregon mean hiking, biking, and running trails! (Who's with me?!) 

There's nothing better than finding an adventure of the day, and these bars are my go-to snack for clean and lasting energy!

They're packed with nutritious fiber, protein, and flavor--and, hear me out - they are SO incredibly easy! All you need to prepare these is a good blender or food processor and voila! The PERFECT healthy snack!

These bars are raw, gluten-free, and vegan.

Raw Dark Chocolate + Sea Salt Bars

What You'll Need:

  • 1 cup (about 9-10) medijool dates, pits removed
  • 1 cup cup raw walnut halves
  • 1 tsp. cacao powder
  • 1 Tbsp. pure maple syrup, to taste
  • ½ tsp. Himalayan sea salt (or regular white table salt)
  • ¼ cup Bob’s Red Mill Almond Meal

Raw Apple Pie Bars

What You'll Need:

  • 1 ½ cup dried apple slices
  • ¾ up pitted medijool dates
  • 1 cup cashews or walnuts (unsalted)
  • 1 tsp. ground cinnamon
  • ¼ cup Bob’s Red Mill Almond Meal
  • 1/8 tsp. sea salt
  • 1-2 Tbsp. pure maple syrup, to taste

The Method:

  1. Lay parchment paper or wax paper over a cookie sheet. (If using parchment paper and not wax, spray with a thin layer of coconut oil to prevent sticking.)
  2. Combine all ingredients (for your chosen bar) in a food processor and pulse.
  3. Use a rubber spatula to make sure everything has been properly mixed. Spread the mixture across the cookie sheet and parchment paper. Place a top layer of parchment paper over the top and press using the back end of a spatula to assure bars are “flat” and mostly even in their width. Freeze for 20 minutes or refrigerate for an hour before cutting into bars. Store in between layers of parchment paper in an airtight container for up to a week. Enjoy!
