The Perfect Thanksgiving (Leftovers!) Salad

Friends, as many of you know, I just had a baby (well, he was born four weeks ago, which means YAY, we made it a whole month!)

I’ve been taking some time away from the blog to ease into Mamahood, but I just HAD to pop on and share the tastiest recipe for a healthy and hearty Thanksgiving leftovers salad! This recipe is great because it can be made with stuff you already have in your kitchen—cranberries, pecans, greens (of any type), and of course, leftover turkey! It’s filling and flavorful and simple to toss together - so what do you have to lose?!

Okay… onto the food! The following recipe will serve two.

What You’ll Need:

  • 4 cups of kale, spinach, or another type of dark leafy green

  • 1/2 cup dried cranberries

  • 1/2 cup chopped pecans

  • 1/3 cup goat cheese, feta, or crumbled blue cheese

  • 1/2 avocado, chopped into 1/4-inch chunks

  • 2 stalks of celery, chopped coarsely

  • The seeds of 1/2 pomegranate

  • leftover turkey meat

  • balsamic vinaigrette or balsamic vinegar and olive oil

  • salt and pepper to taste


The Method:

  1. Wash and dry your greens. If you’re working with a coarse kale variety, spend a few minutes massaging it in your hands to soften it. Otherwise, toss it into a medium mixing bowl.

  2. Add in remaining ingredients and toss together. Season with salt and pepper. Just before serving, drizzle with vinaigrette or vinegar and olive oil. Enjoy!
