Skillet Beef Tacos for #TacoTuesday

Ever want a simple taco? Sometimes I like to get fancy (check out my shrimp tacos and delicious pork carnitas) but other times I want a good ol’ beef skillet taco. I’m not a huge fan of taco seasoning from the packet, so this recipe is seasoned with spices from your pantry. It’s easy, tasty, and delicious!

When I buy beef, I look for grass-fed—and I like to cook with 85% fat (the fat helps the beef cook evenly, maintain it’s juices, and adds to the flavor!) I share some of my favorite brands of beef on my Instagram @tiff.kent!

This recipe serves 5-6

What You’ll Need:

  • 1 tbsp. extra virgin olive oil or avocado oil
  • ½ small sweet (yellow) onion, finely diced
  • 1 lb. grass-fed ground beef
  • ¼ tsp. chili powder
  • ¼ tsp. cumin
  • ¼ tsp. paprika
  • ¼ tsp. sea salt or Himalayan salt
  • ¼ tsp. ground black pepper
  • ¼ tsp. crushed red pepper flakes

For the Tacos:

  • 12-15 of your favorite type of tortilla! (I opted for whole wheat, but you can go corn or flour—or even hard shell!)
  • 3 large tomatoes, finely chopped
  • 1 large head of romaine lettuce, finely chopped
  • finely shredded cheese

The Method:

  1. In a stovetop over medium-high heat, add oil and then the beef and the chopped onion. (The fat from the beef will help the onion simmer.) Season with chili powder, cumin, paprika, salt, pepper, and red pepper flakes. Cook until no longer pink—being careful to turn frequently—for 15-20 minutes. Turn to “simmer” while you prepare the rest of your taco fixings’!
  2. Combine beef, chopped tomatoes, lettuce, and cheese into a tortilla and enjoy!
